10% Whole Bunch included in an open fermenter. Pumped over twice daily to aid the extraction of both colour and flavour.

Colour: Vibrant red with a purple hue.

Nose: Blend of fresh berries and fruits of the forest laced with floral notes. Savoury hints of smoked meats and black pepper.

Palate: Luscious dark fruit flavours featuring blackcurrant, brambleberries, and plump black cherries. The interplay of spices is harmonious, with elements of black pepper, cloves, and a hint of anise. Well-structured tannins provide depth and a velvety texture.
